Spicy Lentil Soup

imageI recently had a pot luck with my clients and one of my dear yoga students made us lentil soup…mmm!!

It was loaded with veggies, and quinoa and delicious spices. I decided to search up a recipe to make my own! You know me…anything I can mash together is a winner in my kitchen!

This dish is packed with complete protein, iron, magnesium, and calcium, just to name a few. It’s going to leave you warm, happy and satisfied!

I saved a lot of time by pre chopping all the vegetables up in the morning. I set my timer for 30mins to simmer and took a nap 🙂 I know we all can’t nap, but 30 minutes is plenty of time to do other things you may not “have time” for .

Feel free to mess around with the ingredient portions to your liking

WHAT YOU NEED

2 Tbsp. oil (avocado, grape seed, olive)
1 medium onion, chopped
5 cloves garlic, minced

2 slices of ginger (I cook almost everything with this amazing spice. It’s great for digestion, circulation, and anti inflammatory)
1.5 cups of dried lentils

1/2 cup of uncooked quinoa
2 (14.5 oz.) cans no-salt diced tomatoes or 4 diced tomatoes

Carrots, celery, as much as you want (I love my soups chunky)
1 bay leaf
1 carton low sodium vegetable stock or chicken stock (1 litre)

1/2 litre water (or adjust for preference)
â…“ cup fresh chopped cilantro
cayenne pepper, sea salt and fresh ground black pepper for taste

WHAT TO DO
In a large soup pot, heat  oil over medium heat.

Add onion and other vegetables; saute the vegetables for 8 minutes or until onion is soft and lightly browned.

Stir in garlic and ginger; cook for 1 minute.

Add lentils, tomatoes, bay leaf, vegetable stock and water.

Bring to a boil, lower the heat to medium-low and simmer partially covered for 30 minutes or until lentils are tender.

Remove from the heat and discard the bay leaf.

Transfer 3 cups of cooked soup into a food processor and process until pureed; add the pureed chili back into the remaining chili and stir to combine.

Adjust cayenne, salt and pepper as needed.
