Having our own space back is so great because I can cook what I want in my own kitchen! For dinner tonight:
1. Home made sweet potatoes fries (recipe below)
– packed with potassium to regulate and support your nervous system, magnesium to support stress and energy levels, fibre and vitamin c and loads of flavour to keep you blood sugar in balance and to keep you full with lower starch and calories!
2. Steamed Brussel sprouts, onions, zucchini and garlic (I chopped the Brussel sprouts in half to limit the bitter taste)
– it goes without saying that vegetables are packed with nutrients, antioxidants, fibre, and water! Keep those healthy bowels moving
3. Lean ground chicken balls (Turkey ball recipe on my blog, or sign up for my newsletter and you will get it! It’s HERE)
for this version i added garlic, onions, carrots and Swiss chard, all finely chopped
– a lean animal protein and has all 8 essential amino acids for the building blocks of muscle and to burn fat!
A totally balanced and healthy tasty dinner!!

Home made sweet potato fries:
What you need
2 sweet potatoes
1-2 tbsp olive oil or avocado oil
2 tsp paprika
1 tsp sea salt
1 tsp garlic powder
1 tsp black pepper
1/2 tsp cumin
Optional cayenne and/or chilli flakes (yummy!!!!!)
What to do
Preheat the oven to 450 degrees.
1. Cut the potatoes into 1/4″ thin strips, or to your desired thickness and length. Mix all other ingredients together in a large bowl and toss with the potatoes until they are evenly coated.
2. Transfer the potatoes to a large baking sheet covered with parchment paper. Spread the potatoes in a single layer. Try not to overcrowd or have multiple layers of fries — you want them to be roasted, not steamed.
3. Place in the oven and cook for 25-30 minutes, turning the fries once or twice during that time to cook evenly. May take more or less time, depending on the size and thickness you cut the fries.
